Long time, no see.

Wow, writing here again feels weird, but still familiar, nice. I honestly didn’t think that I would be back here again. A lot has happened since the last time I was writing but now I’m here again.

Basically I think I’ve just avoided coming here because I don’t know what to write. I guess I lost my motivation there for a while, but here I am trying to find it again.

Moving to a country where everything is new can be lonelier than you think especially since there is over 14 million people in London. Even though you meet people, even though you hang out with people there is still a hole inside where your friends and family used to be. So the question is, what do you do when you miss your friends? You don’t go and visit because you’ll just end up missing them again. You bring them to you, so that’s what I did. Now I have 3 friends coming within a week and they are all going to start working with me and suddenly I don’t feel alone anymore!

I could choose the easy way out and just go back home, but I know that I’m not done with London yet, I still have so much to learn, see, try, feel and do, and if I went home I would just be disappointed with myself.

I also met someone, an amazing person. It’s basically thanks to her that I am back here again, she is slowly making my motivation come back, my happiness, my joy, my love for cooking. Basically I noticed that looking for someone special makes no one special, but when you expect nothing and just meet someone randomly and you can feel all the puzzle pieces just come together, that’s what’s special. So if you have someone like that you better take care of that person, do whatever you can to make that person feel as special as you feel.

On other notes, I created a dish I think I want to evolve to my signature dish. This dish was surprisingly good. It made me start thinking about how I can make it better and it’s hard haha. I think I just have to approach the dish from another angle, using other techniques, and add garnish to heighten the main ingredients. Hmm… I think I need some time to think about this, at let me show you the dish. It’s Bacalao (dried salted cod) with butter buttermilk infused with spices, soured chia seeds green gazpacho snow and green gazpacho oil. Take a look at the picture and tell me what you think.
