So basically, lately I have been experimenting a lot with Vegan food and to be honest, I have found some great things, recipies, dishes, cooking techniques and flavour combinations straight from the nature.
Basically it all started with me going out to dinner with my vegan friend. We went to 3 different restaurants in 3 days and all the vegan food was honestly just really bad, no flavours, not properly cooked and basically no effort was made what so ever. I guess that if you are vegan yourself, you know exactly what I’m talking about. Very few restaurants respect this choice, to become vegan or sometimes even vegetarians even though this lifestyle grows bigger by the second. To be honest, I used to not care, because I did not see the benefits of eating vegan food. I’m not saying that I turned vegan, but I eat vegan dinner atleast 2-3 times a week and i really enjoy it, and to be honest I have noticed a change in my energy, lately, maybe its like a placebo effect or maybe it actually is that I just feel better by eating those few plates of nature a week.
Anyways, back to the topic. So what I want is to share some of my vegan dishes here with you and hopefully some of you will try them and give some feedback! Sadly not everyone can make every dish like the original since I have a fully equipped restaurant kitchen to practice in but If you want to try them I can re-write them to fit a normal home kitchen.
So this dish is: Smoked aubergine, kale pesto, Dukkah, mango chutney, pickled onions and rosted hazelnuts.
