So basically, lately I have been experimenting a lot with Vegan food and to be honest, I have found some great things, recipies, dishes, cooking techniques and flavour combinations straight from the nature.

Basically it all started with me going out to dinner with my vegan friend. We went to 3 different restaurants in 3 days and all the vegan food was honestly just really bad, no flavours, not properly cooked and basically no effort was made what so ever. I guess that if you are vegan yourself, you know exactly what I’m talking about. Very few restaurants respect this choice, to become vegan or sometimes even vegetarians even though this lifestyle grows bigger by the second. To be honest, I used to not care, because I did not see the benefits of eating vegan food. I’m not saying that I turned vegan, but I eat vegan dinner atleast 2-3 times a week and i really enjoy it, and to be honest I have noticed a change in my energy, lately, maybe its like a placebo effect or maybe it actually is that I just feel better by eating those few plates of nature a week.

Anyways, back to the topic. So what I want is to share some of my vegan dishes here with you and hopefully some of you will try them and give some feedback! Sadly not everyone can make every dish like the original since I have a fully equipped restaurant kitchen to practice in but If you want to try them I can re-write them to fit a normal home kitchen.

So this dish is: Smoked aubergine, kale pesto, Dukkah, mango chutney, pickled onions and rosted hazelnuts.

Back in action

Vacation is over. Time to go back to reality. It’s not fun. But that is sadly a part of being an adult. So now I’m back to work, new energy, new inspiration, new ideas and most important, new motivation.
Being on holiday was nice, seeing all my old friends and my family, and when you only have a week, it turns out to be quite intense days. But totally worth it. I had so much fun. And I met people I haven’t seen in ages. And stuff like that just cuddling up on the couch with your siblings and watch a movie really affect you in a deep level where all the love live, it’s those moments that you remember forever.

It’s been really hard to let go of everyone, to have to say goodbye, and it’s not getting easier. But this journey I’m doing now, is for me, for my future, to help me reach my goals. Everyone has to do this journey sometimes in their life, but in different ways. The most important thing to remember is that you cannot do it alone. Use your friends, your family and your loved ones as support to keep your spirit up.

I visited my old job, Vendels Matrum which is located in Lund, a city in south of Sweden. My friend is both co-owner and the head chef, and the week I came they had a menu tasting which I invited myself into haha, and as usual the food was amazing and was accompanied by amazing wines and various drinks. The reason I like Vendels Matrum is because how they all work as a family, they are a small team with big visions of what a great restaurant should be, and it is! It really is a great place to eat either the tasting menu or just having one dish or even just having a drink. So do me a favor, if you’re ever in South of Sweden for some reason, visit Lund and even more, visit Vendels Matrum. Just look at these pictures. I promise you that it tastes as good as it looks! Look at these pictures, its 5/7 of the new dishes.

First out we have scallop with elderberries, oyster and horseradish

Vacation days. Not a second wasted.


I’m back, in nice, sweet, lovable, cozy, pine smelling Sweden. Only for a week though, but still. It doesn’t matter how long i’ve been away from home, it will always feel like home, it will always be familiar. I’ve only been here for 24 hours and I’m starting to realise how much you take home for granted while living here. Not just home, but your family, this feeling of being safe and secure. My little brother gave me his room to sleep in and he took the spare bed, how sweet isn’t that? Families are amazing, take care of them and always make sure that they know that you love them.


Moving on!


Before I went on vacation I started making a pancetta and  lardo, just waiting for me in London. Then they need to hang for about 2 months, so if they turn out good i will give you the recipe! And also we’ve tried a few dishes for the new menu, it’s turning out to be a really good one! Ahh i cannot wait to try it and show and share it with you guys! We also made cured egg yolks! May sound disgusting, but i promise you, it tastes very good and can be used for a lot of things! It can be grated on pasta dishes, or be used to make a really creamy mayonnaise.

The bread and butter on our a la carte menu is amazing. Our head pastry chef Curtis (@tattooedpastrychef on instagram) makes the most amazing bread which he bakes every single day, and with that I make different kind of butters to accompany the bread. It’s important to let your creative side work its’ magic, even if it’s just something as simple as butter. Don’t hold yourself back, always push yourself to the next level!

Today I met an old friend, and we talked about all the shit we’ve been through, from where we started till where we are today. The journey has been an hard and awful one, but it has still been worth it.  Of course we all have baggage that we bring with us forever, it’s nothing we can do about it except accept all the shit we’ve done!


One of my favourite worst experience, work related, was one day when my head chefs asked me if I wanted to come in sunday evening and clean down the kitchen instead of cooking, and stupid as i was, I said yes. So i started cleaning the back room where we had all the fridges, around 6 p.m. Empty all the walk in fridges, hose them down, scrub, polish, and put everything back in a good order. The same with the bakery, prep room, smoke and charkuteri room, dry storage and last but not least, the service kitchen. I was done 4.30 in the morning, there was no taxis, no buses, windy and cold and i had to walk home. It took me about 1,5 hours, and I was so f*cking angry and when I got home I had 1 hour to sleep before I had to get back to work for the next day! I’m writing this because now I know that you are reading this Sven..

Today I got new tattoos from my good friend! l’ll show them all in next post! I do not know why, but i really like the pain while being tattooed.. haha weird.. What do you guys feel about tattoos? If you don’t have one, would you ever do it?  I love the art on my skin and I’m proud of it! It shows a piece of my history, like a book and my body is the illustrations, showing my story.


I would like to write an actual book, about me, my path, from start till now, and for every chapter, have a recipe or a dish that represent of what I did back then. That would be cool.  And people could follow you in a completely new way. And as you read the book, the dishes becomes more and more complicated and you who is reading could evolve as well at home, trying these new dishes as we go along the story. What do you think? Wouldn’t that be a cool idea? If you have any other ideas or tips about book writing, please make sure to share them!

Everything is constantly evolving.

Heyhey! Welcome back to another post! 

I want to start by telling you all that I am sick. I have the man cold! You know, the worst kind of cold there is, the cold that makes the most manliest man be as vulnerable as a baby. But don’t worry! I’m okay! 

Today I want to talk about how far the world of food has grown. It’s amazing, just a few years ago we only made boiled potato for dinner, today we have foams, crisps, skins, layered potato,  spiraled, potato muffins, and so on and on and on. Its constantly evolving, the world of food. And I can admit that it’s hard to follow everything that is going on. And to invent something new, that’s an almost impossible task! But we have to try, mostly because we like to stimulate our minds with creativity. And maybe, just maybe, someday I will invent something new. I’ll never give up!

But yeah, think, just 10 years ago, the neighborhood restaurants where the places you and your family went on weekends to have a nice dinner, and you ordered your steak with fries or mash and béarnaise sauce. We all have happy memories from those places. Today those places count as “bad places” or like you go there and order something to eat at home, it’s no longer worth to go there with the family on weekends because the food is not exciting, it’s not new, it’s not fancy, not anymore. And sadly, I agree. I wouldn’t go there anymore, maybe to eat a steak or a burger to cure a hangover, but I would never go there on a date, or with the family. But at least we will have the memories. Eating is a necessity but cooking is an art. It’s actually quite sad how they (read we) define restaurant nowadays. Wellwell.. the world Is an everchanging place. And it’s up to us if we want to adjust to this big bold world or not.

Creating a dish, or a menu is like telling a tale. A story of our journey of the years that we have been working in the kitchens. You can almost see where a person Is coming from by reading a menu or a dish. But most of all, by reading a menu, you can often feel if there is passion behind the dishes, and if there is love and handcraft behind all the dishes. If you read a menu and it sounds boring and plane, then there is a big chance that the dishes tastes and looks the same. 
Speaking of where people are from, I’m going on vacation soon, a week back home to my little village in Sweden. To spend time with friends and family. You really appreciate the value of family when you haven’t seen them for a long time. Last time I was home I got shocked to see how big my siblings are. The 3 oldest once are almost taller than me now, which is quite scary, because I’ve always been bigger than them.. and now they are catching up!!! 

My little brother is starting high school today! So congrats to him! Little brother is growing up, studying to become a chef!  In 3 years he will be a schooled chef, ready for the world and all that comes with it!

It’s almost new menu time for Aviary, so if you live in London or maybe just visiting, don’t forget to come by and eat! I’m going to release another recipe soon, so don’t forget to save it because like the last one it will just be available for a few days!!

I did it my way!

These past days has been very hard. Both mentally and physically challenging. But one thing that has helped me incredibly much is the song: My way – Frank Sinatra.  It’s about living the life you want. So when you start looking back at life, you won’t have any regrets. Music can make change your mood from sad to happy in a blink of an eye. Always have a happy list on your YouTube account  or Spotify  account to make you happy if you ever feel sad!

My way, my choice. That is how I want to live my life. I want to look back and think ” I did all that. I DID. This little boy coming from nowhere is now standing on the shoulders of the world!”. Okay.. Maybe a little bit overkill, but you know what I mean.

The good thing of being a chef is that there is always a need of a chef, everywhere in the world. And even better. Being a chef from Scandinavia. Scandinavian restaurants and food is popular all over the world right now. The age of the vikings are back. But in a less brutal and more delicate fine dining way.

I  think the things I miss most from home is nature and silence. London is so loud and filled with grey buildings. Coming from a small village you learn to know all the people and everything about them. But here in London, the streets are always filled with new people. It’s crazy how insignificant you can feel in a city like this. We all have put our own mark on this world in our own way, it’s up to us to decide how big  that mark is

Remember when  you were young and still in school? And every time you had a test or some  other challenging thing in school you always wished to be an adult, because being an adult was so much easier than being a kid. We all thought that, until we grew up. Kids today is going to have more regrets than I have right now, having to spend most of their childhood inside looking at some screen. I like being an adult to by the way, I get to work with what I love, right? Not everyone can say that! I’m truly happy for being where I am today!

Be happy, stay happy, do what makes you happy! If something in your life drags you down, making you unhappy and sad, either change it or remove it from your life. Life is to short for not being happy!

What do you want from life?

One of my biggest dreams is to own a restaurant. But more so, to own a restaurant with my sibling. I have a little brother that is going to cooking school, starting this month, and next year I have a brother starting bakery school and I can’t wait until they are done so I can start training them, evolving their skills so that they are ready the day I buy my own restaurant. Imagine that, starting a family business. How amazing wouldn’t that be?

I very recently gained a new friend. Learning to know this guy is like looking myself in the mirror and see my own soul, hearing my own dream about having my own restaurant, reaching for the same goal to be the very best at what I do, and his first destination is to become the best pizza chef in the world. Now he is only 17 years old, but listening to him speak about his passions and how much he wants this more than ever, lights a fire inside of me, it makes me want to fight harder and reach further. He reminds me of me, knowing how much he is willing to work and sacrifice to do this. I promise you, becoming a chef requires a special mind, a special strength, and be willing to work under the worst circumstances sometimes. Long days, long nights, no weekends. I haven’t seen some of my friends in months hahaha.

One thing I dislike is how fast food restaurants has destroyed amazing dishes as burgers, pizzas, Asian cuisine. It’s terrible, centuries of generations that has worked to bring this food to us, and we dare to ruin it with pizza hut, McDonald’s, Burger king, Chop Chop. Seriously people, what are we doing. All this fast food places. That’s why I’ve decided that when my friend comes of age, I will do everything in my power for him to succeed with his restaurant, to bring back the love and handcraft in this amazing dish. You may think it sounds ridiculous “It’s just a burger” or “it’s just a pizza” but remember that these foods didn’t invent themselves and should be appreciated just as much as the finest Beef Wellington. Because someone took the time to invent the burger and the pizza, and now places like what I mentioned before, like McDonald’s and so on are just ruining their memories, and all for a quick buck. That’s not right.

Be careful with what you eat. We only have one life, why not enjoy it in the right way? Instead of going with your friends to a fast food restaurant, save some money, plan instead and go to a real restaurant and eat some real food. You will feel better and have so much more fun, and enjoy it so much more.

The recipe I posted got so much happy response so that’s something I’m going to continue with! And I really hope you will continue to appreciate it! “Life is a game, and money is how we keep score.”

Money sucks! Period. End of story.

Today I saw this post: “Money is the root to all evil”, and lately I’ve felt that money is everything. You can’t really do anything without money, and your entire life is about working to survive. I don’t understand how some people have so much money. Money for generations. Money to buy small countries and islands. And of course, I know that they probably worked really hard for that money, some have worked for generations to build up companies and so and, but I still feel like there is a too big of a difference in the world moneywise.

And how some countries and cities are built for rich people, like London. When I lived in Sweden I had a beautiful 2-bedroom apartment with a huge living room, an amazing modern kitchen, and a balcony and I paid £790 a month, it’s about a thousand dollars. In London you get, a (if you are lucky) ok studio flat, or a small but kind of beautiful bedroom in a shared flat. How is that not too big of a difference in money value?

I feel so confused and lost because I want so much from life, but I don’t know how to start, where to start! I have an amazing job, which is a huge career booster for me, but it’s not enough. I want to have a good future, filled with traveling to exotic destinations. I want to be able to buy a house in south of Spain when I’m old and ready to settle down in one last place. I want to open an amazing restaurant where people can come and enjoy amazing food and drinks, but I don’t know how to get from here to there.

I know that for each year that has passed I’ve come a little bit further, but it also feels like I’m not escalating in life fast enough. I don’t know, maybe I’m just overthinking this.. it is pretty late… it’s 2 o’clock in the morning here. And I’m just laying here, letting the thoughts play tricks with my mind. The worst thing is when you start doubting yourself, even for a second, because it can ruin your entire spirit and It can take a while to get back to believing yourself again.

Maybe I want to much from life? Is that possible? It’s not like I’m asking to be handed stuff for free, I know that there Is a lot of ground to cover if you want a piece of the sweet life. And you have to push your mind and body to extreme lengths to get there.

Ahh… now it just feels like it’s too much negativity in this post. I’m sorry for that, I didn’t mean for happen, but we all know that life isn’t just sweet and happy! Let me give you a few tips to try to save some money. To have good money saving tips are very essential to a wealthy future. Of course not all of this will work for everyone, but find 2-3 you like and try them in real life! Good luck!

  • Always have a shopping list, and stick to it! It’s so easy to just walk in the store and go “Ah, I need this and this and this!” And at the register you just spent a lot more than you would’ve otherwise!
  • Move a specific amount of money to a savings account each month when you get your salary! Even if it’s just a few dollars or cents, it’s still more money saved than you had before. And look for a bank that doesn’t have a fee for new accounts.
  • Use coupons when shopping! That’s why you get them. You may not save thousands, but it’s still a little more money. Write a weekly food schedule for your meals and plan after your coupons.
  • Build a budget. It’s really useful to have a budget. Start with your income and then take away all the bills, and then the cost for food for a month. Have 3 envelopes with these 3 headlines: Emergencies, Fun, Extra. So the emergency envelope is for if something breaks, car, fridge, washing machine. Fun is for if you want to go and see a movie, go for a dinner, beer with your friends. Extra is for gifts, essential stuff to buy and so on!

I’ve found my way!

Starting this blog has been a lot of fun! But also a lot of work! Now after a few weeks I finally understand how it works. Basically I’ve been writing for an audience that is on a global scale and that’s wrong. Because that’s not what I want. I want to write to those who are interested in evolving into a better person! I want to write for those who are trying to find their place in the world! For those who know what they want from life but are figuring out their way to get there! And most important, for those who are interested in food! Like me! I know what I want, and I know how hard I have to work to get there! I know that all the blood, sweat and tears hasn’t been for nothing, all the injuries, cuts, loss of fingertips hasn’t been in vain!  Finally I see the path clearer than ever. I hope you all want to follow my  way and that we will help each other to break out and show the world what we are made of!

Every one of you out there, find your uniqueness and embrace it, use it and evolve it!

I’ve known since I was 7 years old that I wanted to be a chef. My father was a chef, and during my time growing up, that was when you started seeing chefs more and more on tv. And I was stuck.

I used to invite friends over just to cook for them haha, 7-year old, making spaghetti and sausages haha! It was fun, I was proud of myself! And now I work as a professional chef constantly trying to evolve and be better at it. If you want to play in the big leagues, this is what you have to do! “Fight till your idols are your rivals!” One of the best quotes I’ve ever heard and something I feel is very true for me! And this is exactly what I’m fighting for! For me and my future! I don’t want to be 60 and have regrets that I should’ve done anything differently. That is what drives me, keeps me going even though I’m so tired, broken or whatever. I can’t give up, I won’t give up, ever.

So keep following me here, keep fighting with me and don’t let anything stand in your way!

I have a dream!

I do have a dream. But for that to happen I need to be known. Or to be more exact, I need people to know my name and what I do. My food. My way of thinking. And I know it sounds very shallow “know, famous, etc.”.. I know it does, but it is what I need to fulfil my dreams. And there are different kinds of famous. It’s not that I expect to become the next Marco Pierre White…

Do you know who Jiro Ono is? Of course you don’t, and that’s okay! He has one of the best sushi restaurants in the world. He is booked over a year in advance. Jiro is a 91-year-old man, who has a restaurant with 10 seats. Jiro started in a kitchen when he was 7. And is now the proud owner of Sukiyabashi Jiro! A 3 Michelin star awarded restaurant. HE IS 91 and is still working almost every day. That’s amazing. That’s what I want, that’s the kind of famous I want to be. I want people to know me for what I can do. But the problem is that I don’t even know what I can do right now. I can cook, I can cook really good food, and I have an eye for plating.

But every chef has to find his way. Like right now I enjoy cooking everything, but when it’s time for me to start my own business I can’t have a menu with a billion dishes just because I enjoy cooking everything. I need to find a path of what I want to do, the thing I do best. Well… I have a few years left to figure that out I guess. But I am very impatient. Ever since I was 16 and and still till this day I want to be older, wiser, better. Just jump 10 years ahead, that would be enough. But maybe that’s a good thing that I can’t, imagine all the things I would miss haha.

Here we are again, stuck in my mind, a spinning swirl of thoughts about everything, and it isn’t even noon yet..

Well people, now it’s time for breakfast and then I have to get ready for work! Woop woop! Next week I’m trying out some new dishes for the next menu! So don’t forget to check out the blog now and then! Thank you for your time.

Hard work, broken feet!

Sigh..! *Deep Breath* *Breath out*

Okay. Now I’m ready to write! Hey you! It’s me your friendly neighbourhood Spider man! No it isn’t, but it’s your friendly neighbourhood sous chef! Especially if you live in Finsbury park in London! Because there is the amazing Montcalm Royal London House which is a 5-star hotel And on top of the hotel is the Aviary which is their amazing restaurant. Aviary is basically my new home. I think I spend more time there than I’m actually home during the weeks haha!

It might be one of the busiest places I’ve ever worked at. So much to learn everyday, so many new things, faces, places, names, rooms, dishes, floors and so on and on and on and on! I can tell you that I run more here than what I’ve ever done on a treadmill! My feet hurt so much haha!

Did you know that having a blog is also some kind of fulltime job? I didn’t know that! Here I thought that I was just going to write my thoughts feelings and emotions here! But NO! It’s so much more! And it is really hard to find a healthy balance between this and my new job, but let’s give it a week or two, to find it. I still enjoy it though! Just so you know. Sometimes I feel like I just want to write a post just to post something, but that’s also wrong, because why would you read if it’s something that you can’t feel anything from, why should you read my empty post that doesn’t mean anything! So I stop myself, take a deep breath and say to myself: Tomorrow, you can write something real tomorrow!, and that’s what I do! I wait. Last post was written by my fiancée because I was working a bunch of fifteen-hour shifts, and I was soooo tired, to tired to think, to tired to try. But she did a good job, didn’t she? I think it was a good post! About all these amazing places in London! I liked it at least!

I want to give you an update of my stocks! They went up for a while! I actually made money, but then today it all fell haha! Everything is minus now, you can’t always go up. Life is just like the stock market, some days it goes waywayway up! And some days it crashes, and everything went to shit. I know I have those days. Everyone has them. No one is happy all the time! If you are happy always, like all the time, everyday, how would you know? It would just be another day of your life, so guys and girls, appreciate your down days because they make you appreciate your happy days!

One thing I both love and hate is being alone with my thoughts, like right now in this moment, I’m thinking about how big the world is, and how much there is on this planet we will never experience because life is too short. We spend years in school and then we spend the rest of our lives at a job, mastering it trying to be the best at what we do and that’s what we focus on! That’s what I focus on. But there is so much out there that I want to learn, eat, see, feel. But I will never get the chance because the world is just too big to be managed in one lifetime.  Well well.. we can’t have everything, can we? We just have to try to fill the rest of our lives with what we want to do, if it’s travel, master a new skill, become a monk in the Himalaya mountains, whatever it is, set a goal and do it! Go for it! The only thing that can stop you is you. Not money, not responsibilities, because if you really want something, you do whatever to get there. Remember that people!
